Beef Pho Bowl
Boil a serving of thin rice noodles according to package directions. Slice 3 ounces beef flank steak “against the grain” and as thinly as possible (freezing the beef for 15 minutes first makes slicing easier). Spread the beef in a large shallow serving bowl and plop the cooked noodles in the middle. Microwave 1 cup pho soup base (substitute with bone broth or chicken or beef stock) until boiling. Pour the hot broth over the beef. Add your favorite toppings, like chopped scallions, bean sprouts, paper-thin mushrooms, cilantro, and mint. Serve with lemon or lime wedges, fish sauce, and hot chili sauce. And it’s pronounced fuh (like duh).
