Halibut and Zucchini Pouches
Tear off 4 large (15 x 12 inches) sheets of parchment paper, which you can find near the aluminum foil at the grocery store. Place a serving of halibut just below the centerline of each paper. Sprinkle with salt and pepper. In a bowl, combine 1 diced zucchini, 1 diced yellow squash, a cup of halved cherry tomatoes, a minced garlic clove, 2 teaspoons olive oil, salt, and pepper. Spoon the vegetables over the halibut. Fold the paper over and seal the edges to make a pouch. Bake at 400 degrees Fahrenheit until you hear a strong sizzling sound (about 13 minutes for a 1-inch thick halibut). Cut open the pouches. Don’t burn yourself. Squeeze on lemon.
