Egg and Vegetable Breakfast Burrito

Scramble a couple eggs. Toward the end of cooking, stir in leftover cooked vegetables from dinner the night before. If you don’t have leftover vegetables, sauté a big handful of spinach in the pan before adding the eggs. Season with salt and pepper or your favorite seasoning blend, or kick it up with hot sauce. Roll the contents in a 100 percent whole-wheat tortilla and you’re good to go.
