There are more carotenoids in a can of corn than you'd find in an ear fresh off the farm, though some vitamin C is lost in the canning process. Choose yellow varieties for their higher levels of beta-carotene and, in particular, always buy organic, since corn is one veggie that is heavily sprayed with pesticides.
