Sulfites are chemicals used in food processing to prevent browning and discoloration. They are also present in some medications. Just as some people experience heart palpitations after drinking caffeine, some people are sensitive to this chemical. In rare cases, sulfites have been known to cause anaphylaxis but sulfite sensitivity generally presents as asthma-like symptoms. It is very rare for someone without asthma to have sulfite sensitivity.
