Heirloom Corn & Bacon Relish
"The combination of corn and bacon is such a classic that it goes with just about anything. You could dress up pasta with it, and it would be great with most seafood. Summer corn is so sweet that when it's paired with the savory bacon, you get that delicious salty-sweet flavor profile. This relish also gets a strong boost of flavor from aromatics like garlic, shallot, and fresh herbs. It's easy enough for anyone to make at home, but really adds a lot of depth to a dish. I try to use heirloom corn and lesser known varieties when I can, as they're often more flavorful and nutritious," says Chef Marcus Paslay of Clay Pigeon Food and Drink, where he currently serves this relish with seared sea scallops.
- 4 oz. bacon (medium dice)
- 2 cups heirloom corn (shucked and taken off the cob)
- 1/2 cup heirloom cherry tomato
- 1/4 cup celery (small dice)
- 1 tsp. shallot (minced)
- 1 tsp. garlic (minced)
- 1 tbsp. chopped parsley & thyme
- Salt & Pepper, to taste
In a sauté pan over medium high heat, render out bacon until crispy, then strain and reserve the rendered fat. Turn the heat up to high on the same pan, add remaining ingredients, and sauté until corn is just barely cooked. Season with salt and pepper and serve.
