McIlhenny Co. Tabasco Chipotle Pepper Sauce
Key Attributes: We know what you're thinking: "Hey, they're, like, the man." Sure, but they also still make hot sauce, and that's what this column's all about. And their Chipotle flavor absolutely satisfies the current theme's criteria (nor does it suffer from excess sodium or corn syrup like some other special Tabasco varieties), i.e. smoky, delicious, and versatile. That campfire feel hits you right away (it's unclear whether just the chipotles or the whole batch of ingredients is given a char), but it's actually the vinegar that lingers longest, giving way to onion and garlic powder that, invariably, makes you yearn to cleanse your palate just so you can go for round two.
Most Appropriate Usage: You can't go wrong with several dashes of this on your scrambled eggs, especially if they're brushing up against some mushrooms and sweet peppers. In general, think of it more as an anytime accent than main-course game-changer, a Liquid Smoke with something extra.
