Cool Ranch Hummus
Ilan Hall, chef / owner of The Gorbals in Williamsburg, Brooklyn, is known for his competitive attitude: he won Season 2 of Bravo's Top Chef. His Cool Ranch Hummus tastes just like the Dorito flavor, but offers all natural ingredients instead of whatever questionable flavoring is on those delicious chips. He created and now hosts Esquire's competitive cooking show Knife Fight, where celebrities like Drew Barrymore, Elijah Wood, Bijou Phillips and notable chefs have been guests. When he's not filming, Ilan is bringing together influences from his Jewish and Scottish heritage (his mom is Israeli, his dad is from Scotland) in The Gorbals' kitchen in dishes such as the aforementioned Cool Ranch Hummus, served with crispy-brined tofu and caraway pickles. "It tastes just like the Doritos, but with more natural ingredients like dried dill and chive. I used to eat hummus all the time growing up (my mom is Israeli), and like experimenting with different flavor profiles," says Hall.
- 4 1/2 canned garbanzo beans, drained and rinsed
- 1 3/4 cup buttermilk
- 1 cup chopped chive
- 1 1/2 tbsp. dry dill
- 1/2 tbsp. garlic powder
- 1/2 tbsp. onion powder
- 1/4 cup finely grated Parmesan
- 1 tbsp. salt
- Juice of 1 lemon
Place all the ingredients in the bowl of a food processor. Process until smooth and adjust seasoning to taste. Serve with vegetables, chips or pita.
