Possibly America's favorite pepper, this Mexican variety is juicy and grassy – perfect in soups or stuffed with cheese and fried. Chipotles are dry-smoked jalapeños that are sold whole, powdered (best for marinades or rubs), or canned in deep red, vinegary adobo sauce.
