For their size – about a half-inch long – these little fellows pack a wicked punch. Usually dried, their tangy heat is great in salsas. They're also ideal for infusions: Add a fistful to a mason jar, fill to the brim with reposado tequila, and let sit for 24 hours. Sip slowly.
