Never fry on the stove in your kitchen. You have two options: You can use a propane fryer, strictly for outdoors (do it on the grass away from the wooden deck), or you can use an electric model specifically for indoor use. The oil should be at 350 degrees. Use an oven mitt, keep the kids and pets away, lower the turkey into the oil, and cover it. Use a deep-fat-fryer thermometer and maintain 350 degrees.
