Cook 2 large yellow onions, diced, over medium heat in 2 tbsp of olive oil for about 30 minutes, stirring occasionally, until deep gold in color. Reserve. Grill a juicy New York strip steak to rare. Slice and reserve. Spread crust with onion "marmalade," top with steak slices, and sprinkle with 6 oz of crumbled Roquefort. Finish with some chopped parsley.
