Here's how to pour a perfect beer every time. First, make sure your glass is thoroughly clean, since oil or lingering soap film can affect head formation. To test your dishwasher, rinse out a glass and then sprinkle it with salt; wherever it doesn't stick is still dirty. Next, tilt your clean glass to a 45-degree angle and slowly dispense the beer until the vessel is halfway filled. Bring the glass upright and pour the remainder of the beer straight down. This will create a foamy head (due to CO2 rising to the surface). That's a good thing, since it captures beer's volatile compounds, which concentrate its aroma.
