Crack the Husks
Beans are then run through a Champion Juicer ($265) without a screen attached to crack the beans and separate the husks. You need to remove the screen because otherwise the cacao butter in the beans (natural beans are about 50 percent cacao butter and 50 percent cacao solids) will liquefy and jam the juicer. The beans can be peeled by hand if you have a couple hours to spare. The aroma at this point is alone worth the price of admission.
