Another paste, harissa originated in Tunisia and is popular throughout North Africa. It's a bit more oily than gochujang and can be extremely spicy, so don't overdo it. Mustapha's Fine Foods of Morocco does a tasty version made with preserved lemons, but it can be hard to find. Mina is an excellent substitute and is more readily available.
