Tivoli Brewing traces its roots to Colorado's earliest German migrants in 1861. For more than a century, Tivoli was the second-oldest continually operating brewery, after Yuengling, but the plant shuttered in 1969. Jumping ahead to 2012, members of the now-thriving Colorado craft scene revived the brand, and in 2015, Tivoli moved into its old Denver brewhouse (albeit on a much smaller scale). Working with the last Tivoli brewmaster from its original incarnation, and the German-style brewing experts at the nearby Prost Brewing, the new owners have recreated the brand's original Helles lager — and likely improved on it a good deal. Today, it's a richly flavored lager with toasty, doughy barley complemented by mild, spicy hops. The beer is crisp and drinkable, suitable for Sunday football, but also subtle and complex, perfect for geeking out.
