Pinche Taqueria, Denver
Pinche Taqueria started as a food truck, but its popularity led to a brick-and-mortar location in 2011. Its strength is the expert blend of classic preparation and creative twists. Their Surf and Turf taco is a perfect blend of two Mexican classics — fried shrimp and lengua (beef tongue). But our favorite is the pork belly agridulce, a sweet and sour concoction made of pork braised in whiskey and tequila, a cabbage-cilantro slaw, and topped with candied garlic. Word to the wise: Pinche Taqueria is popular enough that it doesn’t even need it’s name on the door, so you’ll have to look out for their star-shaped sign that says "Tacos, Tequila and Whiskey."
