Why It's a Standout: This uncomfortably hot tortilla factory, with its gigantic tortilla machine lit by a cardboard torch, has earned a following for its guisados (stews). Best is the slow-braised pork swimming in green tomatillo, a pliable spice-bomb so hearty it can barely be contained by the two fluffy, just-made soft corn tortillas that enwrap it. A third wouldn't hurt. There's not much in the way of seating inside the sweltering strip-mall storefront, so make like a local, and eat on the hood of your car.
