Why It's a Standout: Karanchos, with its cartoonish orange color scheme, bouncy house for kids, and flatscreen TVs, isn't a place to come to for its ambience. Go on a weekend, though, and you'll see a knife-wielding taquero manning a trompo revolving with scarlet pork, the skewer crowned by a pineapple dripping its juice onto the achiote-flavored meat. Show respect. He shaves off gorgeous marinated chunks, which will be perfectly charred and laid in a brawny corn tortilla. Each table in the outdoor space has its own cilantro, onion, and lime, so you've got no one to blame but yourself if you screw it up.
