Why It's a Standout: A certain amount of pride and nostalgia clouds the vision of locals at Ray's, progenitor of the puffy taco and a bona fide San Antonio landmark. The truth is Ray's still makes a damn good taco. A crisp, relatively greaseless tortilla, bulked up bigger than Chris Hemsworth and crammed with fresh ground beef, shredded lettuce, and diced tomato. Cheese costs extra. It's a hefty Tex-Mex classic that owes its origins to the salbutes and panuchos of the Yucatán Peninsula.
