Why It's a Standout: The puffy taco may be San Antonio's finest culinary contribution, and Diana Barrios Treviño of Los Barrios has come closest to perfecting the art form. She flash-fries fresh masa in soybean oil until it inflates into a pillowy tortilla, giving it a crisp outer layer and an airy inner layer.
