Air-Fried General Joe's Chicken Nuggets Recipe

A healthy-fryer-specific recipe from chef Psaltis.


  • 1 lb chicken breast, cut into three-inch cubes
  • 1 tbsp corn oil

For seasoned flour:

  • 2 cups flour
  • 2 tbsp paprika
  • 1 tbsp black pepper
  • 1 tsp cumin
  • 3 tbsp cornstarch
  • 1 tsp baking soda
  • 1 tsp fine salt

For seasoned buttermilk:

  • 2 cups buttermilk
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp cayenne
  • 1 tsp fine salt
  • 2 tbsp seasoned flour


Step One
For flour, place all ingredients into a bowl and mix to combine. Reserve.

Step Two
For buttermilk, place all dry ingredients into a bowl and whisk in buttermilk.

Step Three
Place chicken in buttermilk overnight.

Step Four
Set fryer to 350º.

Step Five
Drain the chicken and toss in remaining seasoned flour.

Step Six
Add corn oil to fryer.

Step Seven
Fry chicken for 20 minutes. Remove and serve with blue cheese dressing.
