Islands: Highland Park 12
Though technically another subdivision of the Highlands, the Islands produce a lot of whisky — most of which fill the flavor gap between the styles of the mainland and Islay. Highland Park, for one, is located up north in Orkney, where high winds limit tree growth, making the peat less woody than the stuff found in Islay. Highland's 12-year-old expression is much more floral and honeyed than its Islay counterparts, but still offers a nice balance of oaky, smoky aromas that are accented by briny sea air. It's the perfect choice for those who want it all.
