Whether you've opted for the sweet or hot version of traditional Italian sausages, it's easy to see (and taste) why these have become staples of grills everywhere. Generally based around pork, and flavored with a variety of spices, including fennel, anise, and paprika, Italian sausages are ubiquitous, whether you're buying them already made and packed at the local supermarket, or opting to pick them up from a local butcher shop. (And if you're feeling particularly adventurous, you can also try your hand at making some yourself.) Lo Spiedo's Spence commented that knowing the right technique for one style of sausage can apply across the board. "Sausages are all the same," he said. "It's more about achieving a char and making use of the grill. Doesn't matter the type as long as you know how to achieve that smoke flavor."
