Sour Beers Like Fatty Foods
There were not one, but two pairings of sour beer and rich fowl. "Fat and the acidity of sours go well," says Bueltmann. "Think of charcuterie — there's usually pickled onions, and fruit or jam on the platter, offering bright, acidic and cleansing contrast to the rich fattiness." At the Pavilion, Funkwerks paired their Oud Bruin sour with pan-roasted duck breast and smoked duck prosciutto. Real Ale Brewing Company (out of Texas) paired their Scots Gone Wild sour beer with fatty foie gras, fig tramezzino with crumbled hazelnuts, thyme, and pumpernickel.
