This plastic and glass brewer works on a very simple principle: Coarse coffee grounds soak overnight in room-temperature water. The water gently pulls the sweet flavors and rich textures out of the grounds while leaving much of the acidity behind; the resulting concentrated coffee can then be mixed with water or milk. "The Toddy has all the sex appeal of a plastic bucket but makes a fantastic concentrate," says Carmichael. "I'd never display it on my counter but would proudly keep one in the cupboard."
