Add the Wood Chips and Start Cooking
Drop them on top of the hot coals. Put the grate on, and close the lid. The grill is ready when smoke pours out of the vents. Add meat on the side opposite coals.
Adjust the heat
You can raise the temperature by opening the vents wider, or lower it by closing them. No thermometer? Estimate the temperature by placing your hand a few inches above the grill: If you can hold it there for 5 seconds, it's about 300°; 10 seconds, 200°. Depending on cook time, you may need to add more coals and wood chips as they burn out.
