Cornell Wings at the Keuka Restaurant (Penn Yan, New York)
If you’re serious about chicken, you might be familiar with the name Robert C. Baker. The Ivy League professor, and member of the Poultry Hall of Fame, who invented chicken nuggets. But even better, he crafted an upstate New York barbecue staple known as Cornell chicken. It's a nod to his alma mater and a dish that's defined by its crispy, golden skin and is made with a simple cider vinegar sauce. To perfect that crave-worthy texture, the wings are deep fried and then baked.
