Country Fried Chicken Wings at The Dutch (Miami, Florida)
We’re calling it: “Chicken lollipops” are about to become a food trend, with more staying power than cronuts or bone broth. A chic restaurant in South Beach is at the forefront of the movement with these country fried chicken wings made with a high-brow honey mustard glaze and dill. Chef Adonay Tafur pickles the both black and yellow mustard seeds and adds in dill, which brings a freshness and licorice finish. But the pièce de résistance? “As opposed to having regular chicken drumettes and flats, we french both pieces of the wing, turning them into one bite-size lollipop, leaving the bone clean for easier handling and enjoyment,” Tafur says.
