Indian River Orange Chicken Wings at Sea Level (Fort Lauderdale, Florida)
Before Top Chef or Chopped, Art Ginsburg, known as “Mr. Food,” ruled the television cooking circuit. Two decades ago, Chef Michael Lottermoser assisted on one of Mr. Food’s shows, and, as a gift, the T.V. celeb gave him a case of Indian River oranges from Florida’s groves. “They were the best I ever had, so as a chicken wing fan, I marinated some in the OJ overnight and then tossed them in a Thai chili sauce,” Lottermoser says. Cleanse your palette with some celery and, then, for your second order of wings, try the authentic jerk chicken ones, a recipe that Lottermoser learned from a Jamaican chef and that he matches up with a mango dipping sauce.
