Watercress Macadamia Nut Pesto Pasta Salad w/ Roasted Summer Vegetables

“I look forward to the summer when local farmer’s markets are open and fresh summer vegetables are in season.’ says Executive Chef Michael Ledesma of Kabana Rooftop. Like watercress and macadamia nuts, a fresh twist on pasta's basil and pine nuts tradition

Ingredients:

  • 6 oz. watercress
  • 4 oz. basil
  • 3 oz. parmesan cheese
  • 1/2 tsp. garlic
  • 8 oz. extra virgin olive oil
  • 4 oz. macadamia nuts
  • 2 oz. sherry vinaigrette
  • salt and pepper to taste
  • 1 cup orzo
  • 4 oz. roasted tomatoes
  • 3 stalks roasted asparagus
  • 1 ear roasted corn
  • 1 roasted zucchini sliced

Directions:

1. Place first 7 ingredients into a blender or food processor and puree until smooth

2. Bring pot of water to boil. Cook orzo by directions on box, drain and cool

3. Roast vegetables on the grill until grill marks form and vegetables are tender

4. Add pesto to cooled orzo and fold in roasted vegetables
