Technically these guys aren't a cheese family, but we had to include them because the processed variety still tends to make a prominent appearance in the dairy aisle at most supermarkets (and, okay, sometimes there's nothing better than a slice of American on a burger).
Some of these products are super processed, but most are made from a combination of fresh and aged natural cheeses that are melted together and mixed with emulsifiers, colors, and seasonings.
Appearance: Somewhat plastic-y, color varies based on additives.
Texture: Soft and elastic.
Flavor: Typically mild, but depends on added salt and seasonings.
What to buy: Kraft singles, Laughing Cow cheese wedges, blue cheese dressing, Babybel cheese spread.
