Arcane Distilling Lone Wolf Whiskey
This tiny Brooklyn outfit works with home- and microbrewers to distill its Lone Wolf whiskey from beer, producing each release in very limited quantities that are markedly different from the previous batch. Founder David Kyrejko uses a vacuum still, a unique tool that serves a purpose. “Beer is a pretty delicate substance, and most brewers will tell you that it's alive,” he says. “This is why I use a vacuum still… It lets me distill at almost room temperature and prevent any degradation of the beer flavors.
