Beets: Jim Kearns at Slowly Shirley
Beets are high in vitamin C, potassium, and fiber — and a great mixer with mezcal.

- 1 oz Zucca
- 1 oz Beet Shrub**
- 3⁄4 oz Art in the Age Rhubarb
- 1/2 oz mezcal
- 1/2 oz Solstandet malted Aquavit
- 2 dashes Bittermen's hopped grapefruit bitters
- 1 lb beets, roasted
- 1 lb turbinado sugar
- 1 lb rice wine vinegar
Method: Wrap beets in foil and roast for 45 min at 300 F before pulsing in Robot Coupe. After beets are pulsed down to a course paste, add sugar. Allow to sit until all sugar dissolves (we use a sous vide process). Strain out all beet solids through a chinois. Weigh out remainder of liquid and divide by half. Combine with the half weight of rice wine vinegar.
