When you were 13 and school was out and the air conditioner was on the fritz, you biked to the diner in town for a float. You didn't mind ponying up your allowance because you were certain that refreshment was a wise investment. Now you're an adult. It is summer again and the heat doesn't get any easier to handle.
"Floats are associated with a treat many of us enjoyed as kids," says Darryl Moiles, executive chef of the Four Seasons Palm Beach in Palm Beach, Florida, and inventor of the Spiced Rum and Coke Float. "So I thought, What is something fun we can create for adults that will still bring up that nostalgic feeling of a special summer treat?"
The adult float, created for the resort's Summer of Ice Cream Love Campaign, conjures up the frozen drinks of childhood, but with a kick. It's easy to make at home, but don't pinch pennies on the rum. Due to the richness of the ice cream and the carbonation of the coke, a low-proof, light rum won't do the trick. Instead, splurge on something boozy and dark that will balance out the sweetness. (We recommend Lemon Hart 151.) Just don't try to hop on your bike when you're done.
Spiced Rum and Coke Float
• High-proof, dark spiced rum
• Homemade or store-bought dulce de leche ice cream
• Lime wedges
In a tall glass, place two scoops of dulce de leche ice cream. Pour 1 oz spiced rum into the glass over the ice cream. Fill to the brim with Coca-Cola, and garnish with a lime wedge.
