Chef Brian Malarkey was born and raised on a ranch near the ocean, so he knows his way around beef and seafood. At Searsucker, a new-American eatery in downtown Austin, he makes the most of the cattle country and the Gulf Coast, serving up dripping hanger steaks and plump bay scallops. When he isn't scouting new restaurant locations or serving as a judge on ABC's "The Taste," Malarkey spends his time searching for the authentic local tastes that inspire him.
