Concern about the safety of Teflon means it's time to trade in that old skillet. Luckily, a new class of cookware enlists a variety of mineral - and ceramic-based - nonstick coatings. After frying, sautéing, and simmering with the most promising new nonstick contenders, we found that this pan's mineral-based Thermolon coating – the key to its nonstick properties – proved itself time and again. Steaks seared wonderfully and omelets slid out smoothly. Cleaning is as simple as wiping with a soapy sponge - no scraping necessary.
