The Backpacker's Pantry Joe's Chicken Mole is a special, complex dish carefully woven together using dried chilies, spices, and chocolate with rice and chicken. You will not believe how good it is!

  • Serving Size: Two 12 oz. Servings
  • INGREDIENTS: RICE (PRECOOKED LONG GRAIN RICE), SAUCE (POTATO STARCH, CHILI PEPPER, FRUCTOSE, COCOA POWDER, SALT, VEGETARIAN CHICKEN SOUP BASE [HYDROLYZED SOY PROTEIN NATURAL FLAVOR, AUTOLYZED YEAST EXTRACT, SOYBEAN OIL, SILICONE DIOXIDE AND EXTRACT OF TURMERIC], CHILI POWDER [CHILI PEPPER, SPICES, SALT, GARLIC, SILICON DIOXIDE AND ETHOXYQUIN], ONION, MALTODEXTRIN, BROWN SUGAR, BANANAS, SPICES), FREEZE-DRIED COOKED CHICKEN.

  • Directions: Add 2 cups (475ml) of boiling water. Stir well. Seal and let sit for 13 minutes. Stir and serve

good mole
I lived in California for years and have had my fare share of really good mole. When I bought this I wasn't expecting restaurant quality, but I was definitely surprised by how good it was. If you like the combo of chocolate and chili flavors, I'd definitely recommend trying this. We brought corn tortillas with us and ate them with it - really good. Also, I suggest adding about a 1/4 cup more water than the cooking instructions say to.

Better than going hungry
I'm generally a big fan of this brand over the others. This meal was excessively salty and a little too sweet for my taste. The 2-serving meal contains over 4 grams of salt! However, the texture was decent and I was hungry from a full day of hiking. It was better to eat it than not to eat and go hungry, for sure.

We made this in a campsite just beyond Togwotee Pass in Wyoming, after a 4000' climb on our bicycles. We were all hungry, but it tasted SO BAD that no one wanted to eat it. My dog wouldn't even eat it, and we were in bear country, so it had to be consumed. Everyone had to eat their share so we wouldn't have food laying around, and we were all DISGUSTED. Yuk!
