“Every August I go up to a friend’s farm in Vermont and press apples. We put the juice into stainless-steel 50-gallon drums and let it ferment all year in his barn. Come the next May, it’s 5 to 7 percent alcohol and tastes incredible — like something between a really elegant beer and a funky natural wine. We give it away to friends and other chefs. It’s something I look forward to every year — because it’s a ritual that starts and ends the summer.”
