The nationwide phenomenon that is the state fair has changed a lot since the very first one held in Syracuse, New York, in 1841. The annual event in nearly every state has outgrown its roots as a place to find award-winning crops and livestock, and gone on to encompass rides, games, and concerts, but the food has remained a mainstay attraction. The Fair is a unique space that provides both the best iterations of its classic offerings as well as new, often obscenely gluttonous innovations.
