You can point to the no-B.S., straight-forward attitude the people of that wide swath of a region are so often lauded for. Really, it may merely be that people out there are used to taking what resources are available to them and making the most out of them, often with little concern for dressing it up. This brings us to the hot beef sundae, which can be found at state fairs in Iowa, Nebraska, and Indiana, among others. It’s essentially exactly what you might imagine such a thing would entail: mounds of marinated beef with mashed potatoes, topped off with cheese and corn chips. It may not be fried or fancy, but it’s a true cornerstone food of nearly any heartland fair.
