Most state fairs celebrate the tradition of barbecuing, some more than others — looking at you, Texas. This is usually with smokey competitions and vendors serving a variety of parts from multiple animals. You’re bound to find more quality variations on anything from ribs to wings, but the irresistible meat of choice for man is the turkey leg. Like some kind of Flintstones cartoon come to life, the massive hunk of meat is, like so many other favorite fair foods, a testament to outlandishness and gluttony. But it’s not just a novelty either: the shape of the meat makes it perfect for on-the-go eating, and the incredible (and delicious) amount of protein it provides gives the body enough energy to make it from the livestock to the carnival area and back again.
