Honey Miso Tilapia
“Tilapia is a mild white fish with a medium flake. It is low in fat and therefore needs to be cooked carefully; over cooking it will lead to a dry, tough finished product. Due to the fact that tilapia doesn’t have a distinctive flavor, you open up the book when it comes to seasoning it. Like chicken, it is versatile, so you almost can’t go wrong,” says Brad Warner, Executive Chef at Atwood.
- 2 (5 oz) fillets tilapia
- 2 fl oz red miso
- 1 fl oz tamari (soy sauce)
- 2 fl oz honey
- 2 fl oz vegetable oil
- ½ fl oz lime juice
- pan spray as needed
- 1 tsp. sesame seeds
- 1 oz scallions
- Preheat oven to 400ºF. In a blender, combine the miso, tamari, honey, vegetable oil, and lime juice and blend until well combined, about 90 seconds.
- Pat the tilapia fillets until dry, and using a brush, paint on the honey miso mixture.
- Spray an oven-safe pan with Pam spray and place the tilapia fillets in the pan. Place in the oven and cook for approximately 12 minutes or until the thick part of the fillets begin to split slightly. Remove from the oven.
- (Optional) Right before serving, paint the tilapia with a little more of the Honey Miso, and using a blow torch, burn the glaze slightly. Garnish with sesame seeds, and julienned scallions. Serve with steamed vegetables drizzled with a little sesame oil — baby bok choy or snow peas are a great option.
