Noyaux
Brewery:Â Cascade Brewing
Style:Â American Wild Ale
Portland is the epicenter for all things weird, and their beer is no exception. Cascade may not be the first barrel house in town, but it has become a place of pilgrimage for sourheads. Their crème de la crème is Noyaux, a blend of their favorites aging among their 1,400 barrels, then dosed with raspberries and apricots. The result is less beer than a magical 9ish percent elixir of fruit, barrel, Belgian yeast, and a weird smelly-feet taste that is somehow one of the best beverages you will ever drink. Your wine-drinking friends will have a new appreciation for your palette when you whip this out of your cellar and drop the term "horse blanket" on them.
