Shaved Jerk Brisket with Pickled Grilled Watermelon Salad
“Summer is a time of BBQs and relaxing with friends. Brisket is a tough fatty meat that takes time and patience to cook but worth the wait; making it the perfect meat for your next party. Having smoked brisket, one of my personal favorite ways, gives you the charred taste with the first bite. This dish paired with a grilled watermelon salad is great when you blend of flavors. Watermelon is always great in the summer and grilling it a new twist that is sure to be a hit,” says Chef Troy Tingling, personal chef to NBA player, Amar’e Stoudemire.
- 2 lbs. Beef brisket
- 1 garlic clove
- 1/2 tsp. thyme
- 1/2 tsp. black pepper
- 1/2 tsp. salt
- 1 cup of Chef Troy Jerk Sauce
- 3 cups of mirepoix (carrots, onion, celery diced)
- 2 cups of water
Trim and clean brisket of any excess fat are silver skin and place in roasting pan. Take remaining ingredients and combine in a bowl and blend together and pour over brisket. Let it marinate overnight. In a preheated oven at 350°f braise for 3-4 hours. When brisket is fork tender remove from juice and skim of any fat from sauce. Slice brisket razor thin and add to salad.
Pickled Grilled Watermelon Salad
- ?1 small watermelon?
- 1 tbsp. vegetable oil?
- 1 cup red wine?
- 1/2 cup sugar?
- Pinch of salt?
- Pinch of pepper
Pare watermelon rind and remove all pink portions. Cut into 1-inch thick cubes. Add 1 tbsp. of oil and grill on high heat for 1 minute each side. Soak in brine made by 1 cup of red wine vinegar and 1/2 cup sugar for an hour. Remove from brine and add baby greens.Back to top
