Buy a box grater.
One of the best ways to salvage overripe, late-harvest tomatoes involves an age-old tool. “I found this great technique where we box-grate them over a pan,” says Vongerichten. “You get a nice pulp. Then you warm it up in the pan – just warm it, don’t cook it. Add some olive oil, salt, pepper. Put it on a plate with a piece of fish, with pasta, a piece of cheese, anything.”Back to top
