Tucked into a stylish but difficult-to-find 18th-century townhouse, with its plush patterned area rugs and cozy leather Chesterfield sofas, Ruby’s menu of seasonal cocktails are some of the city’s most creative, and the bar offers hourlong salon sessions wherein groups of friends can gather to sample cocktails and learn about the origins of gin, whisky, rum, or ancient Scandanavian classics. Ruby’s basement-level bar is focused on highlighting their spirits and serving customers new twists on the classics.
The Drink to Order: Though it isn’t on their official menu, The Rapscallion is the way to go. It’s an oft-ordered take on the Manhattan. Talisker 10 Scotch, Pedro Ximinez sherry, a bit of pastis, and some finishing lemon zest combine on a smoky, malty drink.
