Why It’s a Standout: Lauren Mote, the co-proprietor of Bittered Sling Extracts and bar manager of UVA Wine & Cocktail Bar in Vancouver, loves this quaint but comfortable bar and restaurant on a little alley in the middle of Edinburgh. Its back bar is packed with a deep selection of hard-to-find bitters, liqueurs, and spirits. The always-changing drinks menu orbits around clever interpretations of classic libations.
The Drink to Order: Mote recommends the bar’s take on the Bijou, one of the oldest cocktails out there, dating back to the 1890s. The Bon Vivant’s version substitutes Calvados, an apple brandy, for one of the Bijou’s key ingredients: gin.
