Cook: 20 minutes
3 egg whites, lightly beaten
½ cup onions, finely chopped
1¼ pounds ground turkey breast, meat only
½ cup Parmesan cheese, freshly grated
2 tablespoons fresh flat-leaf parsley, finely chopped
¼ teaspoon garlic powder
½ cup plain, dry breadcrumbs
1 teaspoon freshly ground black pepper
1½ teaspoons garlic clove, minced
1 tablespoon dried oregano (or 2 tablespoons fresh)
1 tablespoon dried basil (or 2 tablespoons fresh)
1. Preheat oven to 450 degrees Fahrenheit.
2. In a large bowl, thoroughly combine all ingredients. With clean, wet hands, form mixture into 10 meatballs by rolling between the palms of your hands. Place meatballs in a large baking pan with a small amount of water- just enough to coat the pan.
3. Cook for 20 minutes or until done. Keep an eye on the pan and add water if needed.
