Herbed Goat Cheese Stuffed Chicken Breast
- 2 oz herb goat cheese
- 2 oz diced pancetta
- 3 skinless, boneless chicken breast
- ¼ tsp salt
- ¼ tsp pepper
- Preheat oven to 400ºF. Combine the goat cheese and pancetta in a small bowl. Cut a horizontal slit down the side of each chicken breast forming a pocket. Divide the goat cheese mixture into 3 equal portions and stuff inside of each pocket; close opening with a toothpick. Sprinkle the outside of each chicken breast evenly with salt and pepper.
- Add chicken to a baking dish and bake for 25 minutes or until chicken is done. Discard the toothpicks. Serve immediately.
